Flac 5.1 to Flac 2.0

Right now I can only play flac files in 2.0 channels but that may change in the future, yet many downloads are in 5.1 surround. If I purchased a 5.1 flac file, is there some way to convert it to 2.0 flac so I can play it now and have the 5.1 version for future use?

 

Will it sound OK if I just extracted the front left and right channels or do I need to somehow fold the surround channels into the stereo channels?

 

I have Audition 1.5 and Audacity. Will either of these software work?
