The DAC in my NAD C740 or my moodlab concepts DAC?

I have some b&w floor-standing speakers and have a NAD C740 receiver on the way. The receiver has an optical input and my source is lossless files in itunes from my optical port on my macbook. The receiver was made in 2003ish i believe. The moodlab just came out recently. What difference, if any is there in DAC technology from 2003 to now and which do you think may be a better DAC? I will of course, do a head to head listen to see how my ears feel about this. But I'm curious about the subject and want to know some details. Also does anyone know what kind of DAC's are in NAD receivers? I couldn't find this on the web at all.
