Digital recording monitor

Question

When I used a three head tape machine, it was clear that I was hearing the actual sound of the tape, i.e. downstream of the record head. How does a digital recorder work? Am I monitoring the sound after the ADC (and DAC)?

 

I expect my Korg DS-DAC-10R monitors the feed to the ADC like a two head tape machine?

I’m willing to bet most devices convert analog to digital right away. If you want to here it the signal is converted back to analog and out to your ears. 

 

It seems like it would be cheaper this way rather than have one complete analog signal path from input to output.
