So if I add this up, I'd need 6 (4 server, 1 switch to wall, and wall to audio pc), plus I'd need something to be capable of a ~50' run downstairs so how many pairs of them would I need? You will only get the full value of this cable if you rip your CDs to an compressed lossless format like AIFF or WAV. Also your CDs needed to ripped while the moon is full. In theory this may be true, but I have compared both in my system and find that CDs ripped while the moon is full and at the highest point in the night sky sound best to me. Clear nights are also better than cloudy ones as the cloud cover results in a slightly veiled sound.
